Southwest Sunshine Burger Tacos

Taco night!

What happens when you mix a delicious Southwest Sunshine Burger with a taco recipe?  Deliciousness. Pure and simple.

I was craving tacos the other evening after my run and decided to try using my Southwest Sunshine Burger patty as my taco “meat.”  I was pleasantly surprised with how easy and healthy these tacos really were – not to mention how completely mouth watering!!

Taco night!

Ingredients:

Makes 2-3 tacos

  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 Southwest Sunshine Burger patty
  • ½ packet of low sodium taco seasoning
  • 1/3 cup water
  • ½ cup black beans
  • 1 sliced tomato
  • ¼ cup spinach or shredded fresh lettuce
  • 1/3 cup sliced onion
  • ½ avocado, sliced
  • Fresh salsa, as needed
  • Gluten-free tortillas

Heat olive oil and garlic over medium heat until garlic starts to brown.  Add Sunshine Burger patty, taco seasoning and water and let cook from 2-3 minutes until warm.  Place patty on tortilla, top with black beans, tomatoes, lettuce, onions and avocado. Top it all off with some fresh salsa.
