Spicy Red Curry Veggies
After an extremely long day, I was starving and really wanted something hearty and easy to prepare. I did a quick stop at my local market and picked up some Madras sauce which is described as a red hot curry sauce from the tip of India’s tongue.
I had broccoli rabe and oyster mushrooms in the fridge so did a quick saute and then added the simmer sauce. Perfection.
Ingredients:
- 1 tbsp olive oil
- 2 cups chopped broccoli rabe
- 2 cups sliced oyster mushroom
- 1 jar Seeds of Change Madras simmer sauce
- Brown rice, quinoa or naan bread
Heat oil over medium heat. Add veggies and saute for about 2-3 minutes. Add simmer sauce, cover and let simmer for about 10 minutes. Serve mixture over brown rice or quinoa or dip naan in the mixture for a perfect (and simple) Indian style dinner.
