After months of recurring ailments, I realized that my eating habits were tipping the scale of unhealthy! This included skipping breakfast, not consuming enough essential nutrients, eating quick fix foods and high GI foods (more in ignorance than anything else) and sugar seemed to appear in every meal in some form or another! It was causing daily havoc to my health and general well-being.  This prompted me to make some fundamental changes to my lifestyle.

I came across the alkaline lifestyle and that made immediate sense – no processed foods or sugar and introducing more vegetables and fruits. I was also deeply concerned about the rising rate in obesity, particularly in children – I have a young son who is serious about becoming a professional tennis player.  I needed to take the lead and instill healthy eating habits to last a lifetime for my family and myself. I liked the idea of eating lots of vegetables and discovered how versatile cooking with them could be.  I discovered new foods such as pomegranates, coconuts, quinoa, millet and a wide range of leafy vegetables. Looking back at our old diet, it really was quite dull and uninspiring! I really liked that our new diet was about the ‘what we grow’ way of thinking as opposed to anything processed or factory produced. I liked that I was in control of every ingredient that went into a meal.

At this very same time, I had a Body Mass Index carried out.  I was horrified to find out that I scored a fat count bordering obesity and my muscle count was below average.  I was confused, as I’ve managed to maintain a decent weight and physique since becoming an adult!  But it all made sense, skipping breakfast had added more hours to a night time’s fasting period which resulted in my body storing fat especially when I was doing lots of cardio work.  I was officially a skinny fat which presented long term health problems including osteoporosis, sluggish metabolism and risk factors linked to heart disease.

I set to work with a Personal Trainer on a grueling fitness program. This involved weight training including compound exercises, high intensity bursts of cardio, and plyometric drills.  I’ve never worked so hard but I loved it!  The results in three months were staggering – my fat measure was in line with where it needed to be and my muscle was creeping upwards – my body was tighter and leaner.  As a family we understand that combining physical exercise with better eating habits makes you feel good. That feeling makes you want to do MORE!

Hi there, I’m Andrea.  I’m a fun loving mom, wife, fitness instructor, and breast cancer survivor.  I found out that I had to have a mastectomy in June of 2007 at the ripe old age of 27.  My first surgery (there are a total of 3 surgeries when you have a mastectomy) was scheduled for August 27th.  In this first surgery, they remove your breasts and place expanders in your chest to slowly inflate your boobs for the next cosmetic surgery.  Needless to say, I wasn’t happy about this, but I like to look on the bright side of things…That being that I will never have saggy boobs!  I’m gonna be one “perky” grandma someday, if you catch my drift Winking smile!

The tumors I had (all 31 of them) were caused by hormone problems.  Any abnormal changes to my hormones (which can be caused by the unnatural ingredients in our food) will cause my body to react in this tumor forming way.  All my doctors sat down with me and explained what I would need to do for the rest of my life, which is mainly staying away from bad ingredients in food and anything else that will change my body’s normal hormone levels.  This is when I truly had an “Aha Moment” in my life.  I realized there was so much that I had yet to learn about health and nutrition.  Up to this point, I just thought that we needed to eat low fat and low calorie and that was what “healthy” was.

Therefore, it was time for a massive change in our home.  No more food with bad ingredients in it!  Out went food with ingredients that were not natural, and in came all the wholesome and nutritious whole foods.  I also wanted to set a recovery goal for myself after my second cosmetic surgery, so I signed up for the Minnie Marathon Weekend 5K at Epcot on May 3rd.  This was the last year for the Minnie Marathon Weekend, and the Princess Half Marathon Weekend would take it’s place the next year.  I had not set a goal for myself in anyway for quite a few years, and it felt so good to make this 5K my recovery goal.

After my recovery from my second surgery, February 18, 2008, I got out there and started running again in April in preparation for my 5K in May.  It felt so good to be on the road to recovery and healthy again!

On May 8th I headed over to Epcot for my first race post mastectomy.  It was a perfect cool May morning, and everyone was in such a happy mood.  Once the race began my mind started to wander…like it always does.  I started thinking about how after this race everything was going to be different.  It made me feel like I was starting over again and making an amazing start to another chapter in my life.  No more chemicals in our foods,  becoming more aware of my health and my family’s health, educating others on the causes of breast cancer, making goals for myself, and making sure I stay active with my son for the rest of my life.  I finished that race with a smile on my face, and a new and better outlook on my life.

How to make your own Ricotta Cheese!

I've always loved cheese but never really looked into how it was made until I started cooking on my own. It is such an intriguing process but can be a lot of work, depending on the type of cheese of course. Ricotta to me was one of those Italian cheeses that was kind of pricey and I only bought when I was making lasagna or ravioli.   Not anymore. :) It is extremely simple to make your own ricotta at home and the great thing is that there are no chemicals, preservatives or weird ingredients involved.  It's high in protein and is fantastic in sweet and savory dishes or all on its own as a snack! I hope you enjoy it! :)

Homemade Ricotta Cheese
Makes about 5 cups of cheese

1 gallon whole milk
1/3 cup white distilled vinegar
1 tsp sea salt

Supplies you will need:

Large heavy pot
spatula or wooden spoon
cheese cloth
colander
large bowl (larger than the colander)

Heat milk in large heavy pot on medium heat until it starts to bubble around the edges, about 8-10 minutes depending on your stove.  Stir often to prevent milk from sticking to the bottom of the pot. Right before the milk comes to a boil, remove from heat add the salt and vinegar and stir. You will start to see little curdles floating on top:

Leave the milk mixture in the pot out at room temperature for at least an hour. Place a large sheet of cheesecloth inside of a colander, making sure that the edges of the cheesecloth are sticking up over the colander. Place the colander on the top rim of a large bowl so the bowl will catch any liquid that drains from the cheese:

 

Pour the milk mixture into the colander with cheesecloth and let sit for another hour, stirring occasionally with a spatula to help the liquid come out.  Interesting Fact:  The liquid that you strain is actually whey and can be saved to be added to protein shakes  or some people even use it to make bread! The longer you let this sit, the thicker the cheese will be. (I was so excited that I forgot to take a picture of the cheese straining!) Once you have strained the cheese to the consistency of your liking, transfer to a dish or Tupperware and store in the refrigerator for up to 7 days.

I made a quick and healthy snack here with whole wheat crackers, ricotta cheese, thin apple slices and a sprinkle of cinnamon on top. Delicious!

You can also have ricotta cheese for breakfast. I added blueberries, almond slices, toasted coconut, and a light drizzle of agave. YUM!
